After losing their jobs at the renowned Arts District restaurant Bon Temps, where they first met, the couple launched Walking Spanish, a chef-driven pop-up that has captivated diners with its innovative take on the classic Salvadoran staple: the pupusa."There's no limit to the pupusas we can create," said Rene. "We think outside the box and cook from the heart." The couple's pop-up, now a permanent fixture on the patio of the West Hollywood mezcal bar Las Perlas, has been redefining the perception of pupusas, making diners feel as if they're experiencing the beloved dish for the very first time.Rene and Stephanie's culinary journey is a testament to the resilience and creativity of the Salvadoran community in Los Angeles. Faced with uncertainty after the closure of Bon Temps, they turned their setback into an opportunity to showcase the depth and versatility of their cultural cuisine.

Igniting the "Salvi Renaissance"

The Coreas' story is just one chapter in the larger narrative of the "Salvi Renaissance" – a term coined by popular Salvadoran comedian Hoozay to describe the resurgence of Salvadoran culture in the city, particularly in the comedy and food scenes."Growing up Salvadoran in Los Angeles, I never felt represented," Hoozay explained. "Being a part of this movement is important to me because it means my kids get to grow up with this kind of representation as the norm. We are laying the groundwork for generations to come."This sentiment is echoed by former Osteria Mozza chef Jimmy Reyes, who has opened his own restaurant, Leña, in Boyle Heights. Reyes is taking a fiery approach to Salvadoran cuisine, drawing inspiration from his childhood memories of enjoying cookouts with his family in El Salvador."Cooking over wood-fire is something that takes me back to those cherished moments," Reyes said. "Owning a restaurant has always been my lifelong dream, but I credit my aunt, Candida De La Luz, as one of my biggest motivations. She's been by my side, watching me achieve her own long-held ambition."
